Sweet Potato Waffle

Sweet Potato Waffles – A High-Protein Waffle with No Refined Flour

Sweet Potato Waffle

Sweet Potato Waffles

Who says waffles can't be healthy? Made with just sweet potato, egg and protein powder, these waffles are naturally sweet, rich in fiber and packed with protein to keep you full and energized.
Servings: 2 Waffles
Calories: 160

Ingredients

  • 1 Medium sweet potato
  • 1 Egg
  • 0,6 dl Vanilla protein powder (¼ cup)
  • 1 tsp Baking powder
  • 1 tsp Cinnamon (or other optional flavor)
Optional Toppings
  • Cottage cheese
  • Fresh berries

Method

  1. Peel the sweet potato and boil for about 15 minutes, or until soft.
  2. Mash the sweet potato until smooth. Add the egg, protein powder, baking powder, and cinnamon. Mix until well combined.
  3. Spoon the batter into a preheated waffle iron. Cook until golden and slightly crisp on the outside.
  4. Top with cottage cheese and berries for extra protein and antioxidants.

Notes

💪 Protein powder: Both whey and plant-based work well. Vanilla flavour complements the sweet potato beautifully.
🍓 Toppings : Cottage cheese and fresh berries are my favourite combination, but Greek yogurt with a drizzle of honey works beautifully too. The options are endless!
👉 Did you know? Each waffle is approximately 160 kcal – warm, satisfying and genuinely good for you!
