Method
- Peel the sweet potato and boil for about 15 minutes, or until soft.
- Mash the sweet potato until smooth. Add the egg, protein powder, baking powder, and cinnamon. Mix until well combined.
- Spoon the batter into a preheated waffle iron. Cook until golden and slightly crisp on the outside.
- Top with cottage cheese and berries for extra protein and antioxidants.
Notes
💪 Protein powder: Both whey and plant-based work well. Vanilla flavour complements the sweet potato beautifully.
🍓 Toppings : Cottage cheese and fresh berries are my favourite combination, but Greek yogurt with a drizzle of honey works beautifully too. The options are endless!
