As a 41-year-old woman from Sweden, I’ve spent the last decade exploring the latest health hacks and trends to optimize my own wellness. With a background in Public Health, I’m excited to share my experiences and discoveries with like-minded health enthusiasts. Gluten-free Protein Bread

A gluten-free, high-protein bread made in one bowl with just a handful of real ingredients. No additives, no blood sugar crash. Just nourishing, satisfying buns that are ready in under 30 minutes.
Servings: 6 buns

Ingredients
  

  • 1 cup Cottage cheese (250g)
  • 4 Eggs
  • 2 cups Organic, glyphosate-free oats (5 dl)
  • 1 tsp Baking powder
  • ½ tsp Salt
  • Fresh basil chopped
  • Sesame seeds (optional topping)
  • Poppy seeds (optional topping)

Method
 

  1. Preheat your oven to 200°C (390°F fan).
  2. Add all ingredients (except toppings) to a large mixing bowl.
  3. Chop and add fresh basil or herbs of your choice.
  4. Mix everything thoroughly until well combined.
  5. Scoop out 6 equal portions onto a baking tray linedwith parchment paper.
  6. Top with seeds of your choice.
  7. Bake for 20–25 minutes, or until golden and firm to thetouch.
  8. Cool slightly before serving or enjoy warm straightfrom the oven!

Notes

🌿 Herbs:I use fresh basil but feel free to experiment with rosemary, thyme, or chives, whatever you have on hand.
🌰 Nuts & add-ins: Chopped walnuts or sunflower seeds mixed into the dough add a nice crunch and extra nutrients.
🌱 Toppings: Sesame seeds, poppy seeds, or pumpkin seeds all work beautifully on top.
🌾 Oats: Use organic, glyphosate-free oats if you can.
