As a 41-year-old woman from Sweden, I’ve spent the last decade exploring the latest health hacks and trends to optimize my own wellness. With a background in Public Health, I’m excited to share my experiences and discoveries with like-minded health enthusiasts. Healthy Apple Cookie Bites

Soft, warmly spiced and naturally sweetened with apple. These little cookie bites are made with almond flour and cottage cheese for a snack that feels indulgent but is actually good for you. Gluten-free and ready in just 30 minutes.
Servings: 6

Ingredients
  

  • 1 Apple
  • 2 dl Almond flour (¾ cup)
  • 1 Egg
  • 1 dl Cottage cheese (⅓ cup)
  • 1 tbsp Coconut oil
  • Vanilla sweetener to taste
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1 pinch Salt

Method
 

  1. Grate the apple and squeeze out as much liquid as possible.
  2. Mix all ingredients together until combined.
  3. Pour into muffin cups or spread on a lined baking sheet.
  4. Sprinkle extra cinnamon on top.
  5. Bake at 170°C (338 °F) fan for 30 minutes.

Notes

🍎 Apple: Squeeze out as much liquid as possible after grating. The drier the apple, the better the texture.
🥛 Cottage cheese: Use full-fat cottage cheese to prevent the batter from becoming too runny.
❄️ Storage: Keep in an airtight container in the fridge for up to 3 days.
