Method
- Grate the apple and squeeze out as much liquid as possible.
- Mix all ingredients together until combined.
- Pour into muffin cups or spread on a lined baking sheet.
- Sprinkle extra cinnamon on top.
- Bake at 170°C (338 °F) fan for 30 minutes.
Notes
🍎 Apple: Squeeze out as much liquid as possible after grating. The drier the apple, the better the texture.
🥛 Cottage cheese: Use full-fat cottage cheese to prevent the batter from becoming too runny.
