Sweet Potato Brownie

Sweet Potato Brownie – A Guilt-Free Chocolate Treat

Sweet Potato Brownie

Sweet Potato Brownie

Who says brownies can't be healthy? This sweet potato brownie is rich, fudgy and naturally sweetened. It's made with real ingredients and a smarter choice than anything you'd find in a store.
Servings: 6

Ingredients

  • 1 dl Mashed boiled sweet potato
  • 1 Egg
  • ½ dl Cocoa powder (3½ tbsp)
  • 1 dl Greek yogurt (⅓ cup)
  • 2-3 tsp Sweetener of your choice
Optional:
  • Sugar-free chocolate as topping

Method

  1. Boil half a sweet potato until soft and mash it well.
  2. Mix all ingredients together until smooth.
  3. Pour into an oven-safe dish.
  4. Add sugar-free chocolate chips or bites on top if using.
  5. Bake at 175°C (347°F) for 20 minutes.

Notes

🍯 Sweetener: I use stevia, but monk fruit is even better if you have it. Both work beautifully without adding refined sugar.
🍫 Chocolate topping: Use sugar-free chocolate chips or bites for the topping. Optional but highly recommended!
⏱️ Baking time: Keep an eye on it! Baking time depends on how thick you make the batter in your dish.
