Method
- Boil half a sweet potato until soft and mash it well.
- Mix all ingredients together until smooth.
- Pour into an oven-safe dish.
- Add sugar-free chocolate chips or bites on top if using.
- Bake at 175°C (347°F) for 20 minutes.
Notes
🍯 Sweetener: I use stevia, but monk fruit is even better if you have it. Both work beautifully without adding refined sugar.
🍫 Chocolate topping: Use sugar-free chocolate chips or bites for the topping. Optional but highly recommended!
⏱️ Baking time: Keep an eye on it! Baking time depends on how thick you make the batter in your dish.
