Method
- Add the frozen mango, coconut cream and lime juice to a blender or food processor. Blend until completely smooth and creamy.
- Pour the mixture into a freezer-safe container and spread evenly. Place in the freezer for at least 30 minutes.
- Remove from the freezer and let sit for 2-3 minutes before scooping. Serve immediately and enjoy!
Notes
🥥 Coconut cream: Make sure it's coconut cream and not coconut milk. The higher fat content is what gives this ice cream its creamy texture.
🍋 Lime zest: Sprinkle a little fresh lime zest over each serving before eating, it adds a beautiful pop of colour and an extra citrus kick.
❄️ Storage: Keep in an airtight container in the freezer for up to 2 weeks. Let it sit at room temperature for a few minutes before scooping.
